Ingredients

  • 200 g Noodles (spaghetti, linguine, or ramen/udon)
  • 3 tbsp Unsalted butter
  • 4 cloves Garlic, minced
  • 1.5 tbsp Soy sauce
  • 200 g Greens (spinach or bok choy), chopped
  • 1 tsp Neutral oil (for sautéing)(optional)
  • 0.25 tsp Black pepper(optional)
  • 0.25 tsp Red pepper flakes(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil and cook the noodles according to package directions until al dente; reserve about 1/4 cup noodle water, then drain.

  2. 2

While noodles cook (or right after draining), heat butter with the neutral oil in a large skillet over medium heat. Add minced garlic and cook 30–60 seconds until fragrant (do not brown).

  3. 3

Add chopped greens to the skillet and sauté 3–5 minutes until wilted and tender-crisp. Stir in soy sauce and black pepper (and red pepper flakes if using).

  4. 4

Add drained noodles to the skillet and toss to coat. If needed, splash in a little reserved noodle water to loosen and help the sauce cling. Taste and adjust seasoning, then serve.
