Ingredients
- 14 oz extra-firm tofu
- 2 tbsp cornstarch
- 2 tbsp neutral oil (canola/vegetable)
- 3 cloves garlic
- 3 tbsp soy sauce (low-sodium if desired)
- 1 tbsp rice vinegar
- 1 tsp brown sugar
- 1 tsp sesame oil
- 3 cups mixed vegetables (broccoli, bell pepper, carrots, snap peas)
- 2 green onions(optional)
- 1 tbsp toasted sesame seeds(optional)
Instructions
- 1
Prep (10 minutes): Press tofu for 5 minutes, then pat dry and cut into 1-inch cubes. Toss tofu with cornstarch until evenly coated. Mince garlic; slice green onions (if using).
- 2
Cook tofu (about 8 minutes): Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add tofu in a single layer and cook, turning occasionally, until crisp and golden on most sides, about 6–8 minutes. Transfer to a plate.
- 3
Stir-fry vegetables (about 6 minutes): Add remaining 1 tbsp oil to the pan. Add mixed vegetables and stir-fry until crisp-tender, about 4–6 minutes.
- 4
Make garlic soy sauce + combine (about 1–2 minutes): In a small bowl, mix soy sauce, rice vinegar, brown sugar, and sesame oil. Add garlic to the vegetables and cook 30–60 seconds. Pour in sauce, return tofu to the pan, and toss until everything is coated and glossy, about 1–2 minutes.
- 5
Serve: Garnish with green onions and sesame seeds (if using) and serve immediately.
