Ingredients

  • 10 oz chicken breast, cooked and shredded
  • 6 oz pasta (penne or rotini)
  • 2 cups green cabbage, shredded
  • 1 cup cucumber, diced
  • 3 tbsp soy sauce (low-sodium if desired)
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger, grated
  • 2 cloves garlic, minced
  • 1 tbsp honey
  • 1 tbsp sesame seeds, toasted(optional)
  • 2 tbsp green onions, sliced(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil and cook the pasta until just tender (about 10 minutes). Drain and rinse under cool water to stop cooking; set aside.

  2. 2

In a large bowl, whisk soy sauce, sesame oil, rice vinegar, grated ginger, minced garlic, and honey until smooth.

  3. 3

Add shredded chicken, cooled pasta, shredded cabbage, and diced cucumber to the bowl. Toss until evenly coated with the sesame-ginger dressing.

  4. 4

Taste and adjust seasoning if needed. Serve topped with sesame seeds and green onions (if using).
