
Rava Masala Dosa

Ingredients
- 1 cup Semolina (Rava)
- 1 cup Rice Flour
- 0.25 cup All-purpose Flour (Maida)
- 4 cups Water
- 2 pieces Green Chilies, chopped
- 1 inch Ginger, finely chopped
- 10 leaves Curry Leaves, torn
- 1 tsp Cumin Seeds
- 3 medium Boiled Potatoes, mashed
- 1 large Onion, sliced
- 0.5 tsp Turmeric Powder
- 4 tbsp Oil or Ghee

In a large bowl, whisk together semolina, rice flour, all-purpose flour, salt, and water to form a very thin, watery batter.

Add chopped green chilies, ginger, cumin seeds, and curry leaves to the batter and let it rest for 20 minutes.

Prepare the masala by sautéing onions, turmeric, and mashed potatoes in a pan with a little oil until well combined.

Heat a non-stick tawa (griddle) on high heat and lightly grease it with oil.

Stir the batter well and pour it from a height starting from the edges toward the center to create a lacy pattern; do not spread with a spoon.

Drizzle a teaspoon of oil around the edges and cook on medium-high flame until the bottom is golden brown and crisp.

Place a portion of the potato masala in the center or on one side of the dosa.

Fold the dosa over the filling and serve immediately with coconut chutney and sambar.
