Ingredients

  • 500 g Chicken breast
  • 3 tbsp Vegetable oil
  • 1 large Red bell pepper
  • 1 large Green bell pepper
  • 2 medium Onion
  • 1 tbsp Garlic paste
  • 1 tbsp Ginger paste
  • 200 g Canned chopped tomatoes
  • 0.5 tsp Turmeric powder
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1 tsp Garam masala
  • 1 tsp Chili powder
  • 1 handful Fresh cilantro(optional)

Instructions

    Cut the chicken into bite-sized cubes and slice the peppers and one onion into thick strips. Finely chop the second onion.

    Heat 1 tablespoon of oil in a large pan or wok. Sauté the sliced peppers and sliced onion for 3-4 minutes until slightly charred but still crunchy. Remove and set aside.

    Add the remaining oil to the pan. Fry the finely chopped onion until golden brown.

    Stir in the ginger and garlic pastes, followed by the turmeric, cumin, coriander, and chili powder. Cook for 1 minute until fragrant.

    Add the chicken cubes to the pan and cook until browned on all sides.

    Pour in the chopped tomatoes and a splash of water. Cover and simmer for 10-12 minutes until the chicken is cooked through and the sauce has thickened.

    Stir the sautéed peppers and onions back into the pan. Add the garam masala and toss well to coat.

    Garnish with fresh cilantro and serve hot with naan or basmati rice.
