Ingredients

Servings:4
  • 1 cup Rava (Semolina/Sooji)
  • 1/2 cup Curd (Yogurt)
  • 3/4 cup Water
  • 1 medium Onion, finely chopped
  • 1 small Tomato, finely chopped
  • 2 pieces Green Chili, minced
  • 1/2 inch Ginger, grated
  • 2 tablespoons Coriander leaves, chopped
  • 1 teaspoon Salt
  • 1/4 teaspoon Eno (Fruit Salt) or Baking Soda(optional)
  • 2 tablespoons Oil or Ghee

Instructions

  1. 1

In a large mixing bowl, combine the rava, curd, and salt.

  2. 2

Gradually add water and whisk to form a thick, smooth batter; let it rest for 15 minutes to allow the rava to absorb moisture.

  3. 3

Check the consistency after resting; if the batter is too thick, add a tablespoon of water to reach a pouring consistency.

  4. 4

Stir in the grated ginger and green chilies, then add the fruit salt if using for extra fluffiness.

  5. 5

Heat a non-stick tawa or griddle over medium heat and lightly grease it with oil.

  6. 6

Pour a ladleful of batter onto the center and spread slightly into a thick pancake.

  7. 7

Immediately sprinkle chopped onions, tomatoes, and coriander over the top, pressing them gently with a spatula.

  8. 8

Drizzle oil around the edges and cook until the bottom is golden brown, then flip and cook the vegetable side for 1-2 minutes.
