Ingredients

  • 200 g spaghetti
  • 4 tbsp unsalted butter
  • 3 cloves garlic
  • 1/2 cup Parmesan cheese (finely grated)
  • 1/2 tsp black pepper
  • 1 tsp salt(optional)
  • 1/4 cup pasta water

Instructions

  1. 1

Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, about 10–12 minutes, then reserve 1/4 cup pasta water and drain.

  2. 2

While the pasta cooks (about 3–5 minutes), melt the butter in a large skillet over low heat. Add the minced garlic and cook until fragrant, about 30–60 seconds (do not brown).

  3. 3

Add the drained spaghetti to the skillet and toss to coat. Add the reserved pasta water a splash at a time, tossing until the sauce turns glossy and clings to the pasta.

  4. 4

Turn off the heat. Stir in the Parmesan and black pepper until melted and evenly distributed. Taste and adjust seasoning if needed, then serve immediately.
