Creamy Pesto Chicken

Ingredients

  • 1.5 lbs Chicken breast
  • 0.5 cup Basil pesto
  • 1 cup Heavy cream
  • 3 cloves Garlic
  • 2 tbsp Olive oil
  • 0.25 cup Parmesan cheese
  • to taste Salt and pepper
  • 1 tbsp Fresh parsley(optional)

Instructions

    Season the chicken breasts with salt and pepper on both sides.

    Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.

    In the same skillet, add minced garlic and cook for 1 minute until fragrant.

    Reduce heat to medium. Pour in the heavy cream and bring to a gentle simmer.

    Whisk in the basil pesto and parmesan cheese until the sauce is smooth and slightly thickened.

    Return the chicken to the skillet, spooning the sauce over the meat. Simmer for 2-3 minutes to heat through.

    Garnish with fresh parsley and serve over pasta or steamed vegetables.
