Ingredients
- 1 cup Semolina (Rava/Suji)
- 2 1/2 cups Water
- 2 tablespoons Ghee or Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Urad Dal (Split Black Gram)
- 1 inch finely chopped Ginger
- 2 slit Green Chilies
- 10 leaves Curry Leaves
- 1 medium finely chopped Onion
- 1/2 cup Carrots and Peas(optional)
- 1 teaspoon Salt
- 2 tablespoons chopped Fresh Coriander

Dry roast the rava in a pan on medium flame for 3-5 minutes until it becomes fragrant and slightly crunchy, then set aside.

Heat ghee or oil in a deep pan and add mustard seeds; once they pop, add the urad dal and sauté until golden brown.

Add the chopped ginger, green chilies, and curry leaves, sautéing for about 30 seconds.

Add the onions and optional vegetables, sautéing until the onions become translucent.

Pour in the water and add salt, bringing the mixture to a rolling boil.

Reduce the heat to low and slowly pour the roasted rava into the water with one hand while stirring constantly with the other to prevent lumps.

Cover the pan with a lid and let it simmer for 2-3 minutes until the water is completely absorbed.

Turn off the heat, garnish with fresh coriander, and let it rest covered for 2 minutes before fluffing with a fork and serving.
