Ingredients

  • 1 lb Penne or Rigatoni pasta
  • 2 large Yellow onions, thinly sliced
  • 16 oz Cremini mushrooms, sliced
  • 4 tbsp Unsalted butter
  • 2 tbsp Olive oil
  • 4 cloves Garlic cloves, minced
  • 0.5 cup Dry white wine(optional)
  • 0.5 cup Heavy cream
  • 0.75 cup Grated Parmesan cheese
  • 1 tsp Fresh thyme leaves
  • 1 to taste Salt and black pepper

Instructions

    In a large skillet, melt 2 tablespoons of butter with the olive oil over medium-low heat.

    Add the sliced onions and a pinch of salt; cook slowly for 25-30 minutes, stirring occasionally, until dark golden brown.

    Increase heat to medium, add the remaining butter and the mushrooms, cooking until mushrooms have released their moisture and browned.

    Stir in the minced garlic and thyme, cooking for 1 minute until fragrant.

    Deglaze the pan with white wine, scraping up the browned bits from the bottom, and simmer until reduced by half.

    While the sauce simmers, boil the pasta in salted water until al dente; reserve 1/2 cup of pasta water before draining.

    Stir the heavy cream and Parmesan into the mushroom mixture, then toss with the cooked pasta.

    Adjust consistency with reserved pasta water if needed, season with salt and pepper, and serve immediately.
