Ingredients

  • 12 oz Shrimp, peeled and deveined
  • 2 cups Broccoli florets
  • 1 medium Bell pepper, sliced
  • 1 medium Carrot, thinly sliced
  • 3 cloves Garlic, minced
  • 3 tbsp Soy sauce (low-sodium if desired)
  • 1 tbsp Brown sugar
  • 1 tbsp Rice vinegar
  • 1 tsp Sesame oil
  • 1 tsp Cornstarch(optional)
  • 1 tbsp Water(optional)
  • 1 tbsp Neutral oil (for stir-frying)
  • 1/4 tsp Black pepper(optional)

Instructions

  1. 1

Prep (10 minutes): Slice the bell pepper and carrot, mince the garlic, and cut broccoli into small florets. Pat shrimp dry and season lightly with black pepper if using.

  2. 2

Stir-fry vegetables (about 4 minutes): Heat a large skillet or wok over high heat with the neutral oil. Add broccoli, carrot, and bell pepper; stir-fry until crisp-tender, about 3–4 minutes.

  3. 3

Cook shrimp (about 3 minutes): Push vegetables to the side. Add shrimp to the empty space and stir-fry until pink and just cooked through, about 2–3 minutes.

  4. 4

Make and coat with garlic soy sauce (about 5 minutes): Add garlic and stir for 30 seconds. Stir together soy sauce, brown sugar, and rice vinegar. If using cornstarch, whisk it with water and add to the sauce. Pour sauce into the pan and toss until glossy and lightly thickened, about 1–2 minutes. Turn off heat and stir in sesame oil.
