Ingredients

  • 6 oz Ramen noodles (discard seasoning packets)
  • 1 tbsp Sesame oil
  • 3 tbsp Soy sauce
  • 1 tbsp Ginger, grated
  • 1 tbsp Honey
  • 2 cloves Garlic, minced
  • 1 tsp Vegetable oil (for sautéing)
  • 2 cups Broccoli florets
  • 1 medium Red bell pepper, thinly sliced
  • 1 medium Carrot, julienned
  • 1 tsp Rice vinegar(optional)
  • 1 tsp Sesame seeds (for topping)(optional)
  • 2 tbsp Green onions, sliced (for topping)(optional)

Instructions

  1. 1

Prep (10 minutes): Grate the ginger, mince the garlic, slice the bell pepper, and julienne the carrot; cut broccoli into bite-size florets.

  2. 2

Cook noodles (about 5 minutes of the 15): Boil noodles according to package directions, then drain and set aside (keep a splash of cooking water).

  3. 3

Quick-sauté vegetables (about 10 minutes of the 15): Heat vegetable oil in a large skillet or wok over medium-high heat. Add broccoli, carrot, and bell pepper; sauté until crisp-tender, about 6–8 minutes. Add garlic and cook 1 minute.

  4. 4

Make sauce and toss (remaining time within 15 minutes): In a bowl, whisk sesame oil, soy sauce, honey, ginger, and rice vinegar (if using). Add noodles to the skillet, pour in sauce, and toss until evenly coated; loosen with a splash of reserved noodle water if needed.

  5. 5

Serve: Top with sesame seeds and green onions (if using) and serve immediately.
