Ingredients

  • 180 g Pasta (penne or spaghetti)
  • 200 g Roasted red peppers (jarred), drained
  • 2 cloves Garlic
  • 2 tbsp Olive oil
  • 0.5 tsp Salt(optional)
  • 0.25 tsp Black pepper(optional)
  • 0.25 tsp Red pepper flakes(optional)
  • 1 tbsp Fresh lemon juice(optional)
  • 0.25 cup Pasta water

Instructions

  1. 1

Bring a pot of salted water to a boil. Cook the pasta until al dente (about 10–12 minutes), reserving about 1/4 cup of pasta water before draining.

  2. 2

While the pasta cooks, blend or mash the roasted red peppers with garlic, olive oil, lemon juice (if using), and a splash of pasta water until smooth and creamy.

  3. 3

Add the drained pasta to the sauce. Toss over low heat for 1–2 minutes, loosening with more reserved pasta water as needed, until glossy and evenly coated.

  4. 4

Taste and adjust with salt, black pepper, and red pepper flakes (if using). Serve immediately.
