Ingredients

  • 1 tbsp olive oil
  • 1/2 medium onion
  • 2 cloves garlic
  • 1/2 medium red bell pepper
  • 1/3 cup reca (tomato–pepper paste)
  • 1 cup crushed tomatoes
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt(optional)
  • 1/4 tsp black pepper(optional)
  • 4 eggs
  • 2 tbsp fresh parsley(optional)

Instructions

  1. 1

Prep (10 minutes): Finely chop the onion and bell pepper. Mince the garlic.

  2. 2

Cook the sauce (about 10 minutes): Heat olive oil in a skillet over medium heat. Sauté onion and bell pepper until softened, 4–5 minutes. Add garlic and cook 30 seconds. Stir in reca, crushed tomatoes, cumin, smoked paprika, and (if using) salt and pepper. Simmer until slightly thickened, about 5 minutes.

  3. 3

Poach the eggs (about 10 minutes): Reduce heat to low. Use a spoon to make 4 small wells in the sauce. Crack an egg into each well. Cover and cook until the whites are set and yolks are to your liking, 6–10 minutes.

  4. 4

Serve: Sprinkle with parsley (if using) and serve hot.
