- 4 cloves Garlic cloves, minced
- 2 tbsp Shawarma spice blend (cumin, coriander, turmeric, paprika)
- 4 pieces Large pita breads or flatbreads
- 0.5 cup Tahini or Garlic sauce (Toum)
- 1 cup Sliced cucumbers and tomatoes
- 0.5 cup Pickled turnips or gherkins(optional)
- 0.5 small Red onion, thinly sliced

In a large bowl, whisk together olive oil, lemon juice, minced garlic, and the shawarma spice blend.

Slice chicken thighs into thin strips and toss in the marinade; let sit for at least 30 minutes or overnight.

Heat a large cast-iron skillet over medium-high heat and add the chicken in a single layer.

Sear the chicken for 8-10 minutes, stirring occasionally, until browned, crispy on the edges, and cooked through.

Warm the pita breads in a dry pan or oven until soft and pliable.

Spread a generous layer of garlic sauce or tahini down the center of each pita.

Layer the cooked chicken, tomatoes, cucumbers, onions, and pickles on top of the sauce.
