Ingredients

  • 1.5 lbs Turkey breast or thigh meat, thinly sliced
  • 0.25 cup Olive oil
  • 2 tbsp Lemon juice
  • 4 cloves Garlic, minced
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Smoked paprika
  • 0.5 tsp Ground turmeric
  • 0.25 tsp Cinnamon
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 4 pieces Pita bread for serving(optional)

Instructions

  1. 1

In a large bowl, whisk together the olive oil, lemon juice, minced garlic, and all the dry spices until well combined.

  2. 2

Add the thinly sliced turkey to the marinade, tossing thoroughly to ensure every piece is coated.

  3. 3

Cover and refrigerate for at least 1 hour, though 4 hours is preferred for deeper flavor penetration.

  4. 4

Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

  5. 5

Spread the turkey slices in a single layer on the baking sheet, ensuring they aren't too crowded to allow for browning.

  6. 6

Roast for 20-25 minutes, tossing halfway through, until the edges are crispy and the turkey is cooked through.

  7. 7

For extra crispiness, turn on the broiler for the last 2-3 minutes of cooking, watching closely to prevent burning.

  8. 8

Remove from the oven and let rest for 5 minutes before serving in warm pitas with tahini or garlic sauce.
