Ingredients

  • 2 lbs Boneless skinless chicken thighs
  • 0.25 cup Extra virgin olive oil
  • 2 tbsp Lemon juice
  • 4 cloves Garlic cloves, minced
  • 2 tsp Ground cumin
  • 2 tsp Ground coriander
  • 1 tsp Smoked paprika
  • 0.5 tsp Turmeric
  • 0.25 tsp Ground cinnamon
  • 0.25 tsp Red pepper flakes(optional)
  • 1 tsp Salt and black pepper
  • 1 large Large red onion, sliced

Instructions

    In a large bowl, whisk together the olive oil, lemon juice, minced garlic, and all the spices until well combined.

    Add the chicken thighs to the bowl and toss thoroughly to ensure every piece is coated in the marinade.

    Cover and refrigerate for at least 1 hour, though overnight is preferred for maximum flavor penetration.

    Preheat your oven to 425°F (220°C) and lightly grease a large rimmed baking sheet.

    Spread the sliced onions across the baking sheet and place the marinated chicken on top in a single layer.

    Roast for 30 to 35 minutes until the chicken is cooked through and the edges start to turn golden brown and crispy.
