Recipe serves 2
Ingredients
- 2 cups Cooked rice (day-old preferred)
- 2 cups Mixed vegetables (frozen or fresh)
- 2 Eggs
- 2 tbsp Mareco seasoning
- 1 tbsp Soy sauce(optional)
- 1 tsp Sesame oil(optional)
- 1 tbsp Neutral cooking oil(optional)
- 1 clove Garlic, minced(optional)
- 2 tbsp Green onions, sliced(optional)
Instructions
- 1
Prep (10 minutes): If using fresh vegetables, chop them into bite-size pieces; mince the garlic and slice the green onions. Crack eggs into a bowl and whisk lightly.
- 2
Cook (15 minutes): Heat a large skillet or wok over medium-high heat with the neutral oil. Add garlic (if using) and stir for 15–30 seconds, then add mixed vegetables and stir-fry until hot and slightly tender, about 6–8 minutes.
- 3
Push vegetables to one side of the pan. Pour in the eggs and scramble until just set, about 1–2 minutes, then mix eggs into the vegetables.
- 4
Add the cooked rice and stir-fry, breaking up clumps, for 4–6 minutes. Sprinkle in Mareco seasoning and toss well; add soy sauce and sesame oil (if using) and cook 1 minute more until everything is evenly coated.
- 5
Finish: Turn off heat and top with green onions (if using). Serve immediately.
