Ingredients

  • 1/2 lb ground turkey (93% lean)
  • 1/4 cup panko breadcrumbs
  • 1 egg
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 clove garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1/2 tsp sesame oil(optional)
  • 2 tbsp green onions, sliced (for serving)(optional)

Instructions

  1. 1

Prep (10 minutes): In a bowl, mix ground turkey, panko, egg, half the garlic, and half the ginger until just combined. Form into 10–12 small meatballs.

  2. 2

Cook (20 minutes): Bake at 425°F (220°C) for 14 minutes, then broil 3–6 minutes until browned and cooked through (or pan-cook in a lightly oiled skillet over medium heat, turning, until cooked through, about 10–12 minutes).

  3. 3

Make teriyaki-style sauce (during the last 5–6 minutes): In a small saucepan, whisk soy sauce, honey, rice vinegar, remaining garlic, remaining ginger, cornstarch, and water. Simmer 1–2 minutes until glossy and thickened.

  4. 4

Coat and serve: Toss hot meatballs with the sauce until evenly coated. Drizzle with sesame oil if using and top with green onions.
