Ingredients

  • 2 medium Pita bread
  • 250 g Mareco (seasoned meat or plant-based filling)
  • 1 tbsp Olive oil
  • 2 cloves Garlic
  • 1 tsp Ground cumin
  • 1/2 tsp Smoked paprika
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 3/4 cup Plain Greek yogurt
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh parsley (chopped)(optional)
  • 1/2 cup Cucumber (diced)(optional)
  • 2 cups Mixed greens

Instructions

  1. 1

Prep (about 12 minutes): Warm the pitas briefly in a dry skillet or microwave until pliable. Mince the garlic. Dice cucumber if using, and chop parsley if using.

  2. 2

Cook (about 14 minutes): Heat olive oil in a skillet over medium-high heat. Add mareco and cook, stirring, until heated through and lightly browned, about 10 minutes. Stir in garlic, cumin, smoked paprika, salt, and black pepper; cook 2–4 minutes more.

  3. 3

Make the yogurt sauce: In a bowl, mix Greek yogurt with lemon juice and a pinch of salt (and parsley if using). Taste and adjust with more lemon or salt if needed.

  4. 4

Assemble: Split each pita and fill with the seasoned mareco. Serve with mixed greens and spoon yogurt sauce over or on the side.
