Ingredients

  • 2 fillets Salmon fillets
  • 1.5 tbsp Olive oil
  • 1 large Lemon (zest and juice)
  • 2 cloves Garlic
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Cooked rice
  • 0.5 cup Plain Greek yogurt
  • 1 tbsp Fresh dill (chopped)
  • 0.5 cup Cucumber (diced)(optional)
  • 0.5 cup Cherry tomatoes (halved)(optional)

Instructions

  1. 1

Prep (10 minutes): Pat salmon dry. Mince garlic. Zest and juice the lemon. In a small bowl, mix olive oil, lemon zest, lemon juice, garlic, oregano, salt, and black pepper.

  2. 2

Cook (18 minutes): Heat a skillet over medium-high OR preheat oven to 425°F (220°C). Place salmon in the skillet (or on a lined baking sheet) and spoon the lemon-herb mixture over the top. Cook until salmon flakes easily and reaches 125–130°F (52–54°C) in the center, about 9 minutes per side in a skillet or 12–15 minutes in the oven (depending on thickness).

  3. 3

Assemble: Divide cooked rice into 2 bowls. Flake salmon over the rice. Top with cucumber and tomatoes if using.

  4. 4

Finish: Stir yogurt with dill. Drizzle over the bowls and serve immediately.
