Ingredients

  • 1 cup Basmati rice
  • 2 cups Water
  • 1 teaspoon Mustard seeds
  • 8 leaves Curry leaves
  • 2 tablespoons Peanuts, roasted and unsalted
  • 2 tablespoons Lemon juice
  • 1 tablespoon Oil (vegetable or mustard)
  • ½ teaspoon Salt

Instructions

  1. 1

Rinse the rice under cold water until the water runs clear, then combine with water in a pot; bring to a boil, cover, reduce heat to low, and cook for 12‑15 minutes until the rice is tender and water is absorbed.

  2. 2

While the rice cooks, heat oil in a small skillet over medium heat, add mustard seeds and let them pop, then add curry leaves and sauté for 30 seconds.

  3. 3

Stir in the peanuts and sauté for another minute until fragrant, then remove from heat.

  4. 4

Fluff the cooked rice with a fork, transfer to a serving bowl, and gently fold in the mustard‑seed mixture.

  5. 5

Drizzle lemon juice over the rice, season with salt, and toss lightly to combine. Serve warm.
