Ingredients

  • 1.5 lbs Chicken breast, cut into bite-sized pieces
  • 0.25 cup Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 3 tablespoons Soy sauce (low sodium)
  • 2 tablespoons Honey
  • 1 tablespoon Cornstarch
  • 2 cups Broccoli florets
  • 1 large Red bell pepper, sliced
  • 1 cup Snap peas
  • 1 tablespoon Fresh ginger, minced
  • 3 cloves Garlic cloves, minced
  • 2 tablespoons Vegetable oil

Instructions

    In a small bowl, whisk together the lemon juice, lemon zest, soy sauce, honey, and cornstarch to create the sauce.

    Heat one tablespoon of oil in a large wok or skillet over medium-high heat.

    Add the chicken pieces and cook until browned and cooked through, approximately 5-7 minutes, then remove from pan and set aside.

    Add the remaining tablespoon of oil to the pan and stir-fry the broccoli, bell peppers, and snap peas for 4 minutes until tender-crisp.

    Add the minced garlic and ginger to the vegetables and cook for 1 minute until fragrant.

    Return the cooked chicken to the pan along with the lemon sauce mixture.
