Ingredients

  • 200 g spaghetti
  • 250 g lamb shoulder, trimmed and cubed
  • 2 tbsp Rogan Josh spice blend (coriander, cumin, fennel, paprika, cinnamon, cloves, cardamom)
  • 3 tbsp plain yogurt
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 120 ml tomato puree
  • 2 tbsp vegetable oil
  • to taste salt(optional)
  • 1 tbsp fresh cilantro, chopped(optional)

Instructions

  1. 1

Bring a pot of salted water to a boil, add the spaghetti and cook al dente (about 9 minutes); drain and set aside.

  2. 2

Heat oil in a heavy skillet over medium heat, add the chopped onion and sauté until golden, then add garlic and ginger and cook 1 minute.

  3. 3

Stir in the Rogan Josh spice blend and toast for 30 seconds, then add the lamb cubes, searing them on all sides (about 4 minutes).

  4. 4

Pour in the tomato puree, reduce heat, cover, and simmer for 20 minutes, stirring occasionally, until the lamb is tender.

  5. 5

Lower the heat, whisk in the yogurt, and gently heat for another 2 minutes without boiling; season with salt if desired.

  6. 6

Toss the cooked spaghetti into the sauce, coat evenly, and serve garnished with chopped cilantro.
