Ingredients

  • 1 medium head cauliflower florets
  • 1 cup plain yogurt (unsweetened)
  • 2 cloves garlic
  • 1 tsp ginger
  • 1 tbsp lemon juice
  • 2 tsp tandoori spice mix
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp smoked paprika
  • 2 tbsp neutral oil
  • 0.5 tsp salt
  • 0.25 cup mint
  • 0.25 cup cilantro(optional)

Instructions

  1. 1

Preheat oven to 450°F (232°C). Line a sheet pan with parchment.

  2. 2

Cut cauliflower into bite-size florets. Pat very dry.

  3. 3

In a bowl mix yogurt, garlic, ginger, lemon juice, tandoori spice mix, cumin, coriander, smoked paprika, salt, and 1 tbsp oil.

  4. 4

Toss cauliflower with the yogurt-spice mixture until well coated. Spread in a single layer.

  5. 5

Roast 20 minutes, then flip and roast 8–10 minutes more until deeply browned at edges.

  6. 6

Make dip: stir remaining yogurt with chopped mint (and cilantro if using) and a squeeze of lemon to taste.

  7. 7

Serve cauliflower bites hot with mint yogurt dip.
