Ingredients

  • 8 large Eggs
  • 10 oz Spinach
  • 1 small Onion
  • 3 cloves Garlic
  • 1 tsp Ginger
  • 1.5 tsp Garam masala
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 0.5 tsp Turmeric
  • 0.25 tsp Cayenne pepper(optional)
  • 2 tbsp Tomato paste
  • 2 tbsp Neutral oil
  • 0.5 tsp Salt
  • 1 tsp Black pepper

Instructions

  1. 1

Finely chop onion, mince garlic, and grate ginger.

  2. 2

Heat oil in a skillet over medium heat. Add onion and cook until soft and lightly golden, 6–7 minutes.

  3. 3

Add garlic and ginger; stir 30 seconds.

  4. 4

Add garam masala, cumin, coriander, turmeric, and cayenne (if using). Stir 30 seconds to bloom spices.

  5. 5

Add tomato paste with a splash of water (1–2 tbsp) and cook 1 minute.

  6. 6

Add chopped spinach and cook until wilted and dry, 3–4 minutes. Season with salt and pepper.

  7. 7

Whisk eggs with a pinch of salt and pepper. Pour eggs into the skillet and gently scramble just until thickened, then fold in the masala-spinach mixture.

  8. 8

Cook 1–2 minutes more until set but still tender. Serve hot.
