Ingredients

  • 12 oz catfish fillets
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 3 cloves garlic
  • 3 tbsp soy sauce (low-sodium if desired)
  • 1 tbsp rice vinegar(optional)
  • 1 tsp sesame oil
  • 1 tsp honey or brown sugar(optional)
  • 1/4 cup cornstarch
  • 2 tbsp neutral oil (for frying)
  • 3 stalks scallions
  • 1 tsp toasted sesame seeds(optional)

Instructions

  1. 1

Prep (about 15 minutes total): Pat catfish dry and season both sides with salt and pepper. Mince garlic. Slice scallions thinly (white and green parts separated).

  2. 2

Coat: Toss catfish with cornstarch until lightly coated; shake off excess.

  3. 3

Fry (about 12 minutes total): Heat neutral oil in a nonstick or skillet over medium-high heat. Fry catfish in batches if needed until golden and cooked through, 3–4 minutes per side (adjust for thickness). Transfer to a plate.

  4. 4

Make sauce: In a small bowl, mix soy sauce, minced garlic, sesame oil, and rice vinegar (and honey/brown sugar if using).

  5. 5

Finish: Reduce heat to medium. Pour sauce into the hot pan and simmer briefly, 30–60 seconds, just to warm and lightly thicken. Spoon sauce over catfish. Top with scallions and sesame seeds (if using).
