Ingredients

  • 2 15oz cans Canned chickpeas, drained and rinsed
  • 0.5 cup Fresh parsley, chopped
  • 0.5 cup Fresh cilantro, chopped
  • 3 cloves Garlic, minced
  • 0.5 cup Red onion, finely diced
  • 1 tablespoon Ground cumin
  • 1 teaspoon Ground coriander
  • 0.25 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 0.5 cup Vegetable oil for frying

Instructions

  1. 1

Pat the drained chickpeas thoroughly dry with paper towels to ensure a crispy texture.

  2. 2

In a food processor, pulse the chickpeas, onion, garlic, parsley, and cilantro until coarsely ground but not pureed.

  3. 3

Transfer the mixture to a large bowl and stir in the cumin, coriander, salt, and lemon juice.

  4. 4

Sprinkle the flour and baking powder over the mixture and stir until well combined and the mixture holds together when squeezed.

  5. 5

Form the mixture into 12 small patties, approximately 2 inches wide and 1/2 inch thick.

  6. 6

Heat the vegetable oil in a large skillet over medium-high heat until shimmering.

  7. 7

Fry the fritters in batches for 3-4 minutes per side until they are deep golden brown and crispy.

  8. 8

Drain the fritters on a wire rack or paper towels and serve warm with tahini or tzatziki.
