Ingredients

  • 2 cups Fresh Coriander Leaves (Cilantro)
  • 1 cup Fresh Mint Leaves
  • 3 pieces Green Chilies
  • 1 inch piece Ginger
  • 1 tablespoon Lemon Juice
  • 0.5 teaspoon Roasted Cumin Powder
  • 0.25 teaspoon Black Salt (Kala Namak)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Sugar(optional)
  • 2 tablespoons Water

Instructions

  1. 1

Thoroughly wash the coriander and mint leaves in cold water to remove any grit or dirt.

  2. 2

Roughly chop the green chilies and peel the ginger before slicing it into small pieces.

  3. 3

Place the coriander leaves, mint leaves, chilies, and ginger into a high-speed blender jar.

  4. 4

Add the roasted cumin powder, black salt, regular salt, and sugar to the mixture.

  5. 5

Pour in the fresh lemon juice and 2 tablespoons of water to help with the blending process.

  6. 6

Pulse the blender until the ingredients are broken down, then blend until a smooth, vibrant green paste forms.

  7. 7

Check the consistency; if it is too thick, add one more tablespoon of water and blend for 5 seconds.

  8. 8

Transfer the chutney to a glass bowl and serve immediately or store in an airtight container.
