Ingredients

  • 2 cans (15oz) Chickpeas
  • 3 large Yellow Onions
  • 4 tablespoons Olive Oil
  • 4 cloves Garlic
  • 1.5 teaspoons Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 0.5 teaspoon Turmeric
  • 0.5 cup Vegetable Broth
  • 0.25 cup Fresh Parsley
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Sea Salt
  • 0.5 cup Greek Yogurt(optional)

Instructions

    Thinly slice the onions into half-moons and mince the garlic cloves.

    Heat the olive oil in a large skillet over medium-low heat and add the onions with a pinch of salt.

    Sauté the onions for 20-25 minutes, stirring occasionally, until they are a deep golden brown and caramelized.

    Add the minced garlic, cumin, smoked paprika, and turmeric to the skillet, cooking for 2 minutes until fragrant.

    Drain and rinse the chickpeas, then add them to the skillet along with the vegetable broth.

    Simmer the mixture for 8-10 minutes, lightly mashing a few chickpeas with a fork to thicken the sauce.
