Ingredients

  • 2 medium Yellow onions
  • 2 tbsp Unsalted butter
  • 1 tbsp Olive oil
  • 1 clove Garlic(optional)
  • 3/4 cup Beef broth (low-sodium if possible)
  • 1/2 tsp Thyme (dried)
  • 1/4 tsp Salt(optional)
  • 1/4 tsp Black pepper
  • 2 slices French bread or baguette slices
  • 1/2 cup Gruyère cheese, shredded

Instructions

  1. 1

Prep (10 minutes): Slice onions thinly. Mince garlic (if using).

  2. 2

Cook (25 minutes): Heat butter and olive oil in a large skillet over medium-high heat. Add onions and cook, stirring often, until deeply golden and caramelized, about 15 minutes.

  3. 3

Add garlic (if using) and thyme; cook 30 seconds. Pour in broth and scrape up browned bits. Simmer until slightly reduced and flavorful, about 8–10 minutes.

  4. 4

Season with pepper (and salt if needed). Toast bread slices briefly (in a toaster or under a broiler).

  5. 5

Top soup with toasted bread and sprinkle with Gruyère. Cover the skillet for 1–2 minutes until cheese melts, then serve.
