- 1 cup baby potatoes, halved
- 1/2 cup green beans, trimmed
- 1 tbsp olive oil
- 2 tbsp shallot, finely chopped
- 1 clove garlic, minced
- 1 tsp fresh thyme leaves
- 1/4 tsp ground black pepper
- 1/4 tsp salt
- 1 tsp white wine vinegar(optional)
Instructions

Boil halved potatoes in salted water until just tender, about 10 minutes; drain.

Heat olive oil in a skillet over medium-high heat. Add shallot and cook 2 minutes.

Add potatoes and cook 8–10 minutes, stirring occasionally, until browned.

Add garlic and thyme; stir 30 seconds.

Add green beans with 2 tbsp water; cover and cook 4–5 minutes until crisp-tender.
