Ingredients
- 2 cups Whole wheat flour (Atta)
- 3 medium Potatoes, boiled and peeled
- 2 pieces Green chilies, finely chopped
- 1 tsp Ginger, grated
- 2 tbsp Fresh coriander leaves, chopped
- 1/2 tsp Garam masala
- 1 tsp Amchur (Dry mango powder)
- 1/2 tsp Ajwain (Carom seeds)
- 1 tsp Salt
- 4 tbsp Ghee or Oil
- 3/4 cup Water

In a large bowl, mix whole wheat flour with a pinch of salt and water; knead into a soft, smooth dough and let it rest for 20 minutes.

In a separate bowl, mash the boiled potatoes thoroughly ensuring there are no large lumps.

Add green chilies, ginger, coriander, garam masala, amchur, ajwain, and salt to the mashed potatoes; mix well to create the filling.

Divide the dough into equal-sized balls and roll one ball into a 4-inch circle.

Place a portion of the potato filling in the center, bring the edges together to seal it, and flatten it gently.

Dust with flour and roll the stuffed ball into a 7-8 inch diameter circle, being careful not to tear the dough.

Heat a tawa or griddle and cook the paratha on medium heat until brown spots appear on both sides.

Apply ghee or oil on both sides and press gently with a spatula until the paratha is golden brown and crisp.
