Ingredients

  • 2 tbsp chili garlic sauce
  • 1 tbsp soy sauce
  • 4 cloves garlic
  • 1 tsp ginger(optional)
  • 1 tbsp vegetable oil
  • 1/2 tsp cumin seeds(optional)
  • 1/4 tsp turmeric powder(optional)
  • 1/2 tsp ground coriander(optional)
  • 1/2 tsp red chili flakes(optional)
  • 180 g noodles (wheat or rice)
  • 1/4 cup water(optional)
  • 1 tbsp lime juice(optional)
  • to taste salt(optional)

Instructions

  1. 1

Bring a pot of water to a boil and cook the noodles according to package directions until just tender. Drain and set aside.

  2. 2

While the noodles cook (about 10 minutes prep total), finely chop the garlic and grate or mince the ginger.

  3. 3

Heat oil in a pan over medium-high heat. Add cumin seeds (if using) and let them sizzle for 10–15 seconds, then add garlic, ginger (if using), turmeric, ground coriander, and chili flakes. Stir for about 30–45 seconds until fragrant.

  4. 4

Add chili garlic sauce and soy sauce to the pan, then splash in water (if needed) to loosen into a glossy sauce. Simmer for 1–2 minutes.

  5. 5

Toss the drained noodles into the pan and stir until evenly coated. Turn off heat and finish with lime juice (if using). Serve hot.
