Cheese Pav Bhaji

Ingredients
- 3 medium Potatoes, peeled and cubed
- 1 cup Cauliflower florets
- 1/2 cup Green peas
- 4 tablespoons Butter
- 2 medium Onions, finely chopped
- 1 tablespoon Ginger-garlic paste
- 3 medium Tomatoes, finely chopped
- 2 tablespoons Pav Bhaji Masala
- 1 teaspoon Kashmiri Red Chili Powder
- 1 cup Processed Cheese, grated
- 8 pieces Pav (Bread rolls)
- 1/4 cup Fresh Cilantro, chopped

Pressure cook the potatoes, cauliflower, and peas with enough water until soft, then drain and mash them thoroughly into a smooth paste.

Heat 2 tablespoons of butter in a large flat pan or kadai, add onions and ginger-garlic paste, and sauté until the onions turn translucent.

Add the chopped tomatoes and cook until they become mushy and the oil starts to separate from the sides.

Stir in the Pav Bhaji masala, red chili powder, and salt, then add the mashed vegetables and mix well.

Add half a cup of water and use a potato masher to blend everything together on the pan while simmering for 10 minutes.

Stir in half of the grated cheese and fresh cilantro into the bhaji until the cheese melts into the gravy.

Slice the pav rolls in half and toast them on a tawa with butter until golden brown.

Serve the hot bhaji topped with the remaining grated cheese, a dollop of butter, and the toasted pav on the side.
