Ingredients

  • 2 packs Ramen noodles (discard seasoning packets)
  • 1 tbsp Sesame oil
  • 2 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tsp Honey or brown sugar
  • 2 cloves Garlic, minced
  • 1 tsp Fresh ginger, grated
  • 1 tbsp Neutral oil (for sautéing)
  • 1 cup Broccoli florets
  • 1/2 cup Bell pepper, thinly sliced
  • 1/2 cup Carrot, julienned
  • 2 Scallions, sliced
  • 1 tbsp Toasted sesame seeds
  • 1-2 tbsp Water (to loosen sauce, as needed)(optional)

Instructions

  1. 1

Bring a pot of water to a boil. Cook ramen noodles according to package directions (about 3–4 minutes). Drain and reserve a splash of cooking water.

  2. 2

In a bowl, whisk sesame oil, soy sauce, rice vinegar, honey, garlic, and ginger. Add 1–2 tbsp reserved noodle water if you want a looser sauce.

  3. 3

While noodles cook, heat neutral oil in a large pan over medium-high heat. Sauté broccoli, carrot, and bell pepper for 6–8 minutes until crisp-tender.

  4. 4

Add drained noodles to the pan with the vegetables. Pour in the sesame-soy sauce and toss quickly for 1–2 minutes to coat (add a splash of water if needed).

  5. 5

Serve immediately, topped with sesame seeds and scallions.
