Ingredients

  • 3 large Zucchini
  • 2 cups Marinara sauce
  • 1.5 cups Mozzarella cheese
  • 0.5 cups Parmesan cheese
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 0.25 cups Fresh basil(optional)

Instructions

    Preheat your oven to 400°F (200°C).

    Slice the zucchini lengthwise into 1/4 inch thick planks.

    Brush zucchini slices with olive oil and roast on a baking sheet for 10 minutes to remove excess moisture.

    In a baking dish, spread a thin layer of marinara sauce on the bottom.

    Place a layer of roasted zucchini over the sauce, followed by more sauce, mozzarella, and a sprinkle of Parmesan.

    Repeat the layers until all ingredients are used, ending with a generous layer of cheese on top.

    Bake for 25-30 minutes until the cheese is bubbly and golden brown.
