Ingredients

  • 3 cups Chicken or vegetable broth
  • 12 Wonton wrappers
  • 150 g Ground pork
  • 1 tbsp Soy sauce
  • 1 tbsp Shaoxing wine (or dry sherry)(optional)
  • 1 tsp Sesame oil
  • 2 tbsp Green onions (finely chopped)
  • 1 clove Garlic (minced)
  • 1 tsp Ginger (grated)
  • 2 Eggs
  • 6 oz Noodles (egg noodles or ramen)
  • to taste Salt(optional)
  • 1/4 tsp White pepper(optional)

Instructions

  1. 1

Prep (15 min): Mix ground pork, soy sauce, Shaoxing wine (if using), sesame oil, green onions, garlic, and ginger. Spoon about 1 tsp filling into each wonton wrapper, moisten edges, and fold to seal (repeat for all wrappers).

  2. 2

Cook noodles (about 5 min of the 20 min cook time): Bring a pot of water to a boil and cook noodles until just tender. Drain and divide between 2 bowls.

  3. 3

Simmer wontons (about 10 min of the 20 min cook time): In a separate pot, bring broth to a gentle simmer. Add wontons and cook until they float and are cooked through, about 6–8 minutes.

  4. 4

Finish egg drop (about 5 min of the 20 min cook time): Whisk eggs until smooth. Reduce broth to a gentle simmer, then slowly drizzle in eggs while stirring the broth in one direction to form ribbons. Season with white pepper and salt to taste.

  5. 5

Serve: Ladle broth and wontons over the noodles and serve immediately.
