Ingredients

  • 200 g All-purpose flour
  • 100 ml Warm water
  • 3 g Active dry yeast
  • 5 g Sugar (for dough)
  • 150 g Mushrooms, sliced
  • 30 g Scallions, thinly sliced
  • 10 ml Soy sauce
  • 5 ml Sesame oil
  • 10 ml Vegetable oil
  • 1 g Salt

Instructions

  1. 1

In a bowl combine flour, warm water, yeast, and sugar; mix until a shaggy dough forms, then knead 5‑6 minutes until smooth and elastic. Cover and let rise 45 minutes (or until doubled).

  2. 2

While the dough rises, heat vegetable oil in a pan over medium heat, add sliced mushrooms and sauté 4‑5 minutes until softened; stir in scallions, soy sauce, sesame oil, and salt, cooking another 2 minutes. Set filling aside to cool.

  3. 3

Punch down the risen dough and divide into 2 equal pieces. Shape each piece into a smooth ball, then flatten into a 10‑cm circle, placing a generous spoonful of mushroom‑scallion filling in the center.

  4. 4

Gather the edges of the dough circle and pinch to seal, forming a bun; place each bun on parchment paper squares.

  5. 5

Steam the buns in a pre‑heated steamer over boiling water for 12‑15 minutes until the dough is fluffy and cooked through.

  6. 6

Remove buns from the steamer, let cool 2 minutes, then serve warm.
