Ingredients
- 2 cups Cooked jasmine rice (cold, day-old preferred)
- 1 cup Mixed vegetables (peas, carrots, corn)
- 2 Eggs
- 3 tbsp Soy sauce
- 1 tsp Sesame oil(optional)
- 1 tbsp Neutral cooking oil (canola/vegetable)
- 2 cloves Garlic (minced)(optional)
- 2 tbsp Green onions (sliced)(optional)
Instructions
- 1
Prep (10 minutes): If your rice is not already cooked, cook it and cool it. Mince garlic (if using) and slice green onions (if using). Crack eggs into a bowl and beat lightly.
- 2
Cook (15 minutes): Heat a large skillet or wok over medium-high heat with neutral oil. Add mixed vegetables and stir-fry until hot and lightly tender, about 5 minutes.
- 3
Push vegetables to the side. Add beaten eggs to the empty space and scramble until just set, about 1–2 minutes. Stir everything together.
- 4
Add garlic (if using) and cook for 30–60 seconds until fragrant. Add cold cooked rice and stir-fry, breaking up clumps, for 6–8 minutes.
- 5
Pour in soy sauce and toss to coat. Drizzle sesame oil (if using) and top with green onions (if using). Serve immediately.
