- 2 cups Mandioca flour (Cassava flour), toasted or raw
- 1/4 cup Extra virgin olive oil
- 1 medium Red onion, finely diced
- 3 cloves Garlic cloves, minced
- 1/4 cup Fresh parsley, chopped
- 2 stalks Fresh scallions, sliced
- 1 teaspoon Dried oregano
- 1/2 teaspoon Smoked paprika
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/3 cup Raw cashews, chopped(optional)

Heat the olive oil in a large skillet or frying pan over medium heat.

Add the diced red onion and sauté for 4-5 minutes until translucent and slightly golden.

Stir in the minced garlic and chopped cashews, cooking for another 2 minutes until fragrant.

Lower the heat to medium-low and gradually add the cassava flour to the skillet.

Stir constantly for 5-8 minutes to toast the flour evenly; it should turn a light golden brown and smell nutty.

Season with salt, black pepper, smoked paprika, and dried oregano while stirring.

Remove from heat and immediately stir in the fresh parsley and scallions to preserve their color.

Serve warm or at room temperature as a side to beans, rice, or grilled vegetables.
