- 210 g Halloumi cheese
- 1 small Ripe papaya
- 150 g Mixed salad greens
- 2 tbsp Olive oil
- 1 tbsp Fresh lime juice
- ½ tsp Red chili flakes
- ¼ tsp Salt
- ¼ tsp Black pepper
Instructions

Cut the halloumi into 1‑cm cubes and pat dry with paper towels.

Heat a grill pan or outdoor grill over medium‑high heat and brush lightly with 1 tbsp olive oil.

Grill the halloumi cubes for 2‑3 minutes per side until golden brown and slightly charred; remove and set aside.

Peel the papaya, remove seeds, and cut into 1‑cm cubes.

In a large bowl combine mixed greens, papaya cubes, and the grilled halloumi.

Whisk together the remaining 1 tbsp olive oil, lime juice, chili flakes, salt, and black pepper to make the vinaigrette.

Drizzle the vinaigrette over the salad, toss gently, and serve immediately.
