Ingredients

  • 8 eggs quail eggs
  • 1/2 cup plain Greek yogurt
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • 1/4 tsp kosher salt(optional)
  • 1/4 tsp black pepper(optional)

Bring a small pot of water to a gentle boil. Carefully add the quail eggs and cook for 5–6 minutes for jammy yolks (about 8 minutes total including bringing back to a boil).

  2. 2

While the eggs cook, stir the Greek yogurt with the grated or finely minced garlic, olive oil, pepper flakes, and a pinch of salt and black pepper.

  3. 3

Drain the eggs, rinse briefly with cool water, and peel. Spoon the garlicky yogurt into two bowls.

  4. 4

Top with the warm quail eggs and finish with a little extra black pepper and a pinch of pepper flakes.
