Ingredients

  • 1 tbsp Olive oil
  • 2 cloves Garlic
  • 1 14.5-oz can Canned diced tomatoes
  • 1 15-oz can Canned white beans (cannellini/navy), drained and rinsed
  • 1 cup Vegetable broth or water
  • 1/4 cup Fresh basil, chopped
  • 1/2 tsp Salt(optional)
  • 1/4 tsp Black pepper(optional)
  • 1 tbsp Lemon juice(optional)

Instructions

  1. 1

Prep (5 minutes): Mince the garlic and chop the basil; drain and rinse the white beans.

  2. 2

Cook (20 minutes): In a pot, warm the olive oil over medium heat. Add garlic and cook for about 30 seconds until fragrant.

  3. 3

Add tomatoes, white beans, and broth (or water). Bring to a gentle simmer and cook for 15–20 minutes, stirring occasionally.

  4. 4

Blend for silkiness: Use an immersion blender to partially blend the soup (or mash some beans with a spoon) until silky but still chunky.

  5. 5

Finish: Stir in basil and lemon juice (if using). Season with salt and black pepper to taste, then serve.
