Ingredients

  • 10 pieces Ladyfingers
  • 120 ml Espresso (hot)
  • 20 g Granulated sugar
  • 250 g Mascarpone cheese
  • 120 ml Heavy cream
  • 2 large Egg yolks
  • 10 g Unsweetened cocoa powder
  • 1 pinch Pinch of salt(optional)

Instructions

    Make the espresso and let it cool slightly (still warm is fine).

    In a bowl, whisk egg yolks with the sugar until thick and pale.

    Whisk mascarpone into the yolk mixture until smooth.

    In a separate bowl, whip heavy cream to soft peaks, then fold into the mascarpone mixture with a pinch of salt.

    Quickly dip ladyfingers into the espresso (about 1–2 seconds per side) and arrange half in the bottom of 2 small serving dishes.

    Spoon half the mascarpone cream over the ladyfingers, then repeat with the remaining dipped ladyfingers and remaining cream.

    Cover and refrigerate at least 4 hours (overnight is best).

    Just before serving, dust generously with cocoa powder.
