Ingredients

  • 1/2 cup Red lentils (dry)
  • 1 tbsp Red curry paste
  • 1 tbsp Fresh ginger (grated)
  • 2 cloves Garlic (minced)
  • 1 cup Coconut milk (full-fat)
  • 2 cups Vegetable broth (or water)
  • 1 tbsp Lime juice
  • 1/4 tsp Salt(optional)
  • 1 tbsp Fresh cilantro (chopped)(optional)

Instructions

  1. 1

Prep (10 minutes): Rinse the lentils. Grate the ginger and mince the garlic; chop cilantro if using.

  2. 2

In a pot over medium heat, add the curry paste and cook for 30–60 seconds until fragrant.

  3. 3

Add ginger and garlic and cook for 1 minute, stirring constantly.

  4. 4

Stir in lentils and broth. Bring to a simmer and cook for 20–25 minutes, stirring occasionally, until lentils are tender and the stew thickens.

  5. 5

Reduce heat to low and stir in coconut milk. Simmer gently for 3–5 minutes to heat through.

  6. 6

Finish: turn off heat and stir in lime juice. Taste and add salt if needed. Serve and top with cilantro if using.
