Ingredients

  • 12 oz chicken breast
  • 1 cup fresh Thai basil (or regular basil)
  • 3 cloves garlic
  • 1 tsp fresh ginger
  • 1 to 2 red chili (or Thai chili)(optional)
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp cornstarch
  • 2 tbsp water
  • 1 tbsp neutral oil (such as canola or vegetable)

Instructions

  1. 1

Prep (10 minutes): Slice chicken thinly. Mince garlic and ginger. Finely chop chili. Tear basil leaves. Mix soy sauce, fish sauce, brown sugar, lime juice, cornstarch, and water in a small bowl until smooth.

  2. 2

Cook (18 minutes): Heat a large skillet or wok over medium-high heat and add oil. Add chicken in a single layer and cook, stirring occasionally, until mostly cooked through, about 8 minutes.

  3. 3

Add garlic, ginger, and chili; stir-fry 1 to 2 minutes until fragrant.

  4. 4

Pour in the sauce and stir to coat. Simmer and stir until the sauce thickens and chicken is fully cooked, about 5 to 6 minutes.

  5. 5

Turn off heat and add basil; toss just until wilted, about 1 minute. Serve immediately.
