Ingredients

  • 12 oz pork tenderloin, cut into 1-inch cubes
  • 1/2 cup cornstarch
  • 1/2 cup vegetable oil
  • 1 bell pepper (red or green), chopped
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/4 cup ketchup
  • 2 tbsp rice vinegar
  • 3 tbsp brown sugar
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated(optional)
  • 2 green onions, sliced(optional)

Instructions

  1. 1

Pat pork cubes dry and toss with cornstarch until evenly coated. (5 minutes prep)

  2. 2

Heat oil in a large skillet or wok over medium-high heat. Fry pork in a single layer until golden and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

  3. 3

Whisk together ketchup, rice vinegar, brown sugar, soy sauce, and 1/4 cup water in a small bowl.

  4. 4

Discard excess oil, leaving 1 tablespoon in the pan. Stir-fry garlic, ginger, and bell pepper for 2 minutes until fragrant and slightly tender.

  5. 5

Pour in the sauce and simmer 1-2 minutes until it thickens slightly. Add pineapple chunks and crispy pork, tossing to coat for 1 minute.

  6. 6

Garnish with green onions and serve immediately over steamed rice.
