Ingredients

  • 1 lb pork shoulder, cut into 1-inch cubes
  • 0.5 cup cornstarch
  • 2 cups vegetable oil for frying
  • 1 cup pineapple chunks
  • 1 large green bell pepper, chopped
  • 0.25 cup ketchup
  • 0.25 cup rice vinegar
  • 3 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced

Instructions

  1. 1

In a small bowl, whisk together ketchup, rice vinegar, brown sugar, and soy sauce to create the sauce base.

  2. 2

Coat the pork cubes thoroughly in cornstarch, shaking off any excess.

  3. 3

Heat vegetable oil in a wok or deep skillet to 350 degrees Fahrenheit.

  4. 4

Fry the pork in batches until golden brown and crispy, approximately 5-6 minutes, then drain on paper towels.

  5. 5

Remove all but one tablespoon of oil from the wok and sauté the garlic, bell peppers, and pineapple for 2 minutes.

  6. 6

Pour the sauce mixture into the wok and bring to a simmer until it begins to thicken.

  7. 7

Add the fried pork back into the wok and toss quickly to coat every piece in the glaze.

  8. 8

Serve immediately over steamed white rice.
