Suji Ka Halwa

Ingredients
- 1 cup Semolina (Suji)
- 1/2 cup Ghee (Clarified Butter)
- 1 cup Granulated Sugar
- 3 cups Water
- 1/2 teaspoon Green Cardamom Powder
- 1 pinch Saffron Strands(optional)
- 1 tablespoon Slivered Almonds
- 1 tablespoon Cashews
- 1 tablespoon Golden Raisins(optional)
- 2 tablespoons Milk(optional)

In a separate saucepan, combine water and sugar, bringing it to a boil until the sugar dissolves completely to create a simple syrup.

Heat ghee in a heavy-bottomed pan over medium heat and add the cashews and almonds, frying until golden brown; remove and set aside.

In the same pan with remaining ghee, add the suji (semolina) and roast on low-medium heat, stirring constantly.

Continue roasting the suji for about 8-10 minutes until it turns a light golden brown and releases a nutty aroma.

Slowly and carefully pour the hot sugar syrup into the roasted suji while stirring continuously to prevent lumps from forming.

Add the cardamom powder, saffron (soaked in milk), and the fried nuts and raisins.

Cook the mixture on low heat until the water is absorbed and the halwa starts to leave the sides of the pan.

Cover and let it steam for 2 minutes on the lowest heat setting before serving warm.
